If I want the server to detect the existence of the robotic car to receive the data collected by the sensors of the car by using Arduino, In this case what the protocol that I will use and how I will do that? Note; the car must go far away from the server without internet for measuring and come back again.
Not Sure why are you mentioning ZigBee , BLE etc as part of of Sensor or device layer. And in the communication layer you have talked about rest protocols etc..... Don't you think you have missed the network communication layer , which is important as it's a wide area of different network communication which is possible here ....may be you didn't have time to elaborate , I don't know

Video helped a lot but seems to have a pretty steep learning curve in the space of about 10 minutes. Would've been nice to see an actual design using event triggers, REST services, and IoT hubs etc..

What kind of work can i do if i study this?
IoT isn't one degree and isn't new. We used to call it "spying" but humans wouldn't like it under that name. IoT encompasses many disciplines such as CompSci + CompEng + ElecEng + DevOps + Data Science + AI + Psychology (since most companies leverage them to make their products addictive and or do group studies to find out the best way to get users to slowly agree (step by step; problem->reaction->solution) to giving you information they normally wouldn't. This COVID19 human rights decline into N Germany level requirments that everyone accepts is a perfect example. See Austria + Australia. Can I see your papers please? That is what IoT is about. My job involves the 1st 4 disciplines and I have a long history working with hospitals, police and border security. Nothing is done for you.. it is done to you.
